Ingredients:
4 bell mushrooms, chopped
3 eggs, whisked
Salt and black pepper to the taste
¼ cup red bell pepper, chopped
½ cup spinach, chopped
1 tablespoon coconut oil
Directions:
1. Heat up a pan with half of the oil over medium heat, add mushrooms, spinach, and bell pepper, stir and cook for 4 minutes.
2. Heat up another pan with the rest of the oil over medium heat, add eggs and scramble them.
3. Add veggies, salt and pepper, stir, cook for 1 minute and serve.
